My husband and my mom have a few things in common, but the thing they have in common the most is a love of German chocolate cake. I’ve never been much of a fan myself but I used to make it a lot for my husband, until he got Diabetes and doesn’t eat sugar any more. We don’t do Easter at my house and never really did when I was growing up, but what’s nice is that I don’t have to do Easter because my parent’s have a big Easter party at their house every Saturday before Easter. I was assigned to bring a dessert. I didn’t want to bring cookies because that’s boring and I didn’t want to just open a package of peeps or something lame but I also didn’t want to put too much effort in to it because I’m super busy right now helping with my daughter’s play. She’s in the Lion King, Jr. and it runs for five days and the last performance is right after my family’s Easter party. So I wanted a quick, easy and portable recipe with an Easter theme.
These little bird’s nests fit the bill. All you do is make a cake mix, put it in mini muffin pans, cook it, push in a little dent with your finger to make the “nest” then put frosting and eggs on. There are tons of different kinds of candy eggs to choose from. You could even put some chicks on them. Be creative and make them your own.
What is your Easter tradition? I know some families go all out. My family nor my husband’s family ever got in to that sort of thing when we were growing up. Even now, we have the family party on Saturday but we never do anything special for Easter dinner. We may ham and scalloped potatoes but we don’t have a big party, which is kind of weird because my family has big parties for lots of other reasons. I will say though, that as much as I enjoy big family parties, it is nice to just stay at home and spend time with my immediate family sometimes.
Simple German Chocolate Bird Nests Recipe
All these are is a box cake mix, canned frosting and some candy eggs. They are so easy and fun.
- 1 Box German Chocolate Cake Mix
- 1/3 Cup Vegetable Oil of Choice
- 2 Eggs
- 1 Container Coconut Pecan Frosting
- Cooking Spray
- Candy Eggs
Pre-heat oven to 350. Combine cake mix, eggs and oil in a medium bowl. Mix with a hand mixer on medium until well combined.
Place a small amount of cake mix in each muffin well. Dough should fill 3/4 of the mini muffin well. Bake at 350 for 8-10 minutes.
Let cool for 5 minutes, then press a small well in the middle of the "nest" with your thumb. Let cool another 20 minutes before filling with frosting. Fill well with coconut pecan frosting. Top with candy eggs.
