Quick & Easy Vegan Salad Recipes
1. Healthy Summer Tomatoes, Basil and Chickpea Salad – Beauty Bites
This salad is wonderful since it’s a combination of tomatoes, basil, and chickpeas. When you add lots of onions, and some sesame seeds you’ll be happy for quite awhile. You could add a few other things if you’d like. I’m thinking about maybe a carrot and some black olives. This is a good side dish or complete meal if that’s what you’re looking for.
2. Broccoli Salad with Sunflower Seeds and Cranberries Salad – Veggies Save The Day
This is a great broccoli salad with cranberries and sunflower seeds. Raw broccoli has never been one of my favorites but if it is one of yours then I hope you enjoy this salad. I remember my mother making this once in a long while. I think it was the dressing on it that made me not like it. This dressing should be a lot better.
3. Classic Potato Salad – The Pretty Bee
Now potato salad is one thing I can wrap my taste buds around. I love it with pickles in it and so I think putting pickle relish in it a really good idea. My mom grew up on a potato farm in Idaho so she knows about potatoes. Since they were always free and plentiful they ate them a lot. The best part was they were a lot better than the potatoes you buy in the store. Did you know they sort potatoes according to their size and the blemishes on them? Of course, the bigger better ones sell for more. The potatoes they sell in the plastic bags are the worst ones, that’s why they’re so cheap. I like it when my uncle gives me a big box of “spuds” from his cellar that he has just harvested. They really do taste a lot better. The new baby potatoes they dig straight out of the field before they are fully grown are the best. They don’t even sell those in the stores.
4. Raw Noodles Salad – The Stingy Vegan
Garlic – Soy Sauce – Rice Vinegar – Brown Sugar – Miso Paste – Sriracha – Zucchini – Carrots – Cucumber – Yellow Bell Pepper – Purple Cabbage – Cherry Tomatoes – Red Onion – Mint Leaves
Here is an Asian style noodle salad that you might like. It isn’t for me but I learned a long time ago that I can’t always just include the recipes that I like. That’s because we all have different tastes and what I like or dislike, you may love. So, I’ve tried to learn to be open minded and include foods that I know other people will like. This is one of those I’ve included just for you. I have to admit that it definitely is pretty though.
5. Garbanzo Summer Salad with Creamy Dill Dressing – Vanilla and Bean
The wheat berries and garbanzo beans add a good amount of protein to this salad. The creamy dill dressing is definitely a plus. It’s kind of like a homemade ranch dressing. It’s definitely healthy with all the veggies and protein. Wheat berries at the wheat kernels before they are ground into flour. I don’t know why they call them berries. When my mom grew up on a farm they grew wheat and they called them kernels, not berries. But each to him and progress I suppose.
6. Zesty Mango Spiralized Cucumber Salad – Cotter Crunch
This cucumber salad looks really good. I love fresh cucumbers. I especially love the cucumbers I grow in my garden. The ones in the store do I dare say, meh compared? Everything is better fresh. This is made with either a balsamic glaze with a link included. Or you can just put some balsamic vinegar on it. The decision is all yours.
7. Chipotle Sweet Potato Noodle Salad with Roasted Corn – Pinch of Yum
The sweet potatoes in this aren’t really noodles. They just spiralized sweet potatoes. You can buy a spiralizer fairly inexpensively if you don’t already have one. Here is a link to a good one on Amazon: The Official Spiralizer. They are actually quite a bit of fun to use and you can use them for all different kinds of vegetables. You can spiralize carrots, beets, zucchini or perhaps anything you can think of. It’s a really good way to eat vegetables in place of pasta.
8. Easy Asian Quinoa Salad – Gimme Some Oven
Isn’t this a beautiful salad! I love the way the colors of the red cabbage and the orange carrots and green onions contrast. Of course, I know it isn’t all about beauty and color but that sure doesn’t hurt when you’re trying to get someone to eat something healthy. It doesn’t matter because this beautiful salad is also healthy. The quinoa adds some protein to make it even healthier.
9. Easy Black Bean and Kale Salad – Nourished The Blog
I can’t believe this is the first salad with black beans in it that I have here. It sure doesn’t look good too though. I love the colors in this one too. With the green kale, the red tomatoes, black beans and it looks like orange carrots to me. They aren’t listed in the ingredients but someone snuck those in there. Wonder who that was.
