Vegan Black Bean Recipes are Sooooo Yummy! I know Vegan black bean recipes can be a pretty broad spectrum. That’s why I tried to have a good variety. I have soup, one-dish meals, nachos, taqitos, enchiladas, and salads vegan black bean recipes here. I love black beans, I really like the taste much better than kidney beans.
Black beans are very healthy for you. But how good are they for you and why? Black beans are very high in fiber, folate, protein, and antioxidants. Black beans also have numerous other vitamins and minerals and make a complete protein when paired with brown rice.
That is probably why they are so commonly included in a vegan diet. Many Mexican and South American dishes also include black beans and rice. Plus beans are fairly inexpensive and easy to cook, especially if all you do is open a can of them.

The part that I wouldn’t have thought of doing would be spreading hummus on the tortilla first before adding the other ingredients to the top.
