Black beans also have numerous other vitamins and minerals and make a complete protein when paired with brown rice. That is probably why they are so commonly included in a vegan diet. Many Mexican and South American dishes also include black beans and rice. Plus beans are fairly inexpensive and easy to cook, especially if all you do is open a can of them.
