I love to use the crock pot to cook these Vegan crock pot recipes because it’s so comforting and easy. It’s so awesome to throw a few things in the crock pot at the beginning of the day and then come home to a comforting home-cooked meal. And since you spend less time cooking, you have more time to relax and eat dinner. Relaxing and eating a good home-cooked meal is one of my favorite everyday comforts.
Some other everyday comforts I enjoy are clays baths, snuggling and watching movies with my children, watching Chick Flicks at night once my children have gone to bed, going on walks with my parents or sleeping in while my husband makes breakfast. As I am writing this, I am snuggling under my favorite blanket.
My mom made me two quilts for my bed when I was eight years old and I still have those quilts and snuggle under them all the time, even when it’s 100 degrees outside. They are just so relaxing to me and remind me of being a child. I instantly feel comfort when I snuggle under one of my blankets. Unfortunately, my children love the blankets too and I have to keep stealing them back from my children, especially my son. 🙂

This soup is made from scratch and has a deep smoky rich flavor because it’s cooked all day in the crockpot. I like to make a big batch so I can use it a ton of different ways for other meals throughout the week.
I like to not only serve it as a soup but I also like to serve it on top of nachos, put it on taco salad. I also like it drizzled on hot dogs and I use it as a dip for flatbread. I like to serve my Easy 4 Ingredient Spelt Tortillas with it.
Making your own tortillas is so easy you wouldn’t believe it. I made this with dry black beans but you could make it with canned black beans. Just don’t follow the directions for soaking them then just add the beans after the vegetables are sauteed.

I chose to include this next one because I love curry and the flavors in this curry sounds great. When you eat Vegan a staple in our diet is chickpeas, they are versatile and good for you. This looks like a feeling and satisfying meal for the whole family,

Bell Peppers – Garlic – Sweet Potatoes – Celery – Onion – Kidney Beans – Black Beans – Tomato Sauce – Tomatoes – Chili Powder – Real Salt – Paprika – Cayenne Pepper – Cumin – Celery Seed – Cinnamon – Red Pepper Flakes
Next, we have a sweet potato chili for your family to enjoy with your favorite side such as cornbread. My personal preference is usually chili over soup because I love the use of beans and think that it makes the meal heartier and more filling and well I love the flavor of beans.

This soup has a mellow and subtle flavor while still being packed full of nutritional vegetables and source of protein. In Thifty Below’s post she talks about how she makes a batch of this soups and then stores them in mason jars so she has them pre-portioned for lunches and I thought this was a great idea. I am always looking for ways to prep food ahead so meal time is easier.
5. Sweet Potato Wild Rice Soup – The Pretty Bee
It was a year or so ago when I discovered I am a fan of soups that have rice in them, I like the texture that it adds to the soup. This soup has a lot of staple ingredients in it so you most likely have a lot of the ingredients already in your pantry if not all of them. You can use any type of beans you would like in this recipe even though it calls specifically for pinto beans.
6. Spaghetti & Vegetables – My Whole Food Life
So next we have a spaghetti recipe which I was excited to include a couple of recipes other than soups and chilis. This is a kid-friendly favorite meal for the whole family to enjoy. It is so easy and a classic it almost seems silly to need a recipe for it but this combination of ingredients in a crock pot sounds so good!

Here is a unique soup that I am excited to give a try. Acorn squash is one of the things grown in the garden that produces a lot of havest and so recipes like this soup is a good one to make a variety of foods with the acorn squash in the garden. There is a fresh flavor with the rosemary and pecans while still being light.

The last one of the list is a minestrone soup that is all plant based and used chickpea flour pasta. This soup uses multiple types of beans and like I mentioned early I am a fan of beans.
